Homemade Baked Eggplant Recipe with Cheese
To prepare 4 servings, we need:
- Eggplant 2 pcs. medium size
- Tomato is not large 3-4 pcs.
- Hard salted cheese 150 g
- Vegetable oil 50-100 ml.
- Greens 1 bunch (dill or parsley)
- Garlic 4 cloves
- Ground black pepper
Wash eggplants and cut them into rings 1 cm thick. You can cut them diagonally so that the pieces are smaller, this is true if you have small eggplants. Sprinkle eggplants with salt and pepper, then leave to marinate for a few minutes.
In the meantime, we cut the tomatoes into half a centimeter thick rings, and rub the cheese on a large grater.
Garlic is cleaned and pressed through a garlic press or finely chopped. Greens finely cut.
We put a wide flat pan on a strong fire and pour a couple of tablespoons of oil into it. Pickled eggplants will make juice, this juice needs to be drained.Eggplants are fried on both sides for 1 minute.
We lay out the parchment on the baking sheet and lay out the fried eggplants, on top of each eggplant we put a ring of tomato. Put a little chopped garlic on top of the tomato and sprinkle with cheese.
We send everything to the oven, preheated to 180 degrees for 15 minutes.
When serving, sprinkle with eggplant greens.

They are great as a festive garnish for meat or fish, as well as an elegant hot snack.
It is better not to serve them cold, be sure to heat this dish before serving.
To prevent the dish from being so fatty, after frying, eggplants should be placed on a paper towel and allowed to drain off the excess oil.
If you like spicy dishes, you can add spicy chili sauce directly into the cheese and eggplant.
In order to avoid sprinkling the eggplants, they must be marinated in a colander or any other container from which water can flow. Thus, after pickling, they will be dry and will not be sprinkled with oil in a pan.
